Smelt ... This little fish always attracts a lot of attention, because is one of the most important and famous fish in the Pskov region. It is also called the "royal fish", tk. in the old days, smelt was revered on the royal table, or "borage", because a distinctive feature of the fish is its smell: fresh smelt smells like fresh cucumber.
